Chestnut cream

You can take it alone, or use it to fill frisuelos, empanadillas or anything else you can think of.

Ingredients:

  • 500 g of peeled and cooked chestnuts
  • 200 g sugar
  • 1 liter of milk
  • 1 cinnamon stick
  • 1 teaspoon vanilla essence
  • A pinch of salt

How to make chestnut cream

  1. In a large saucepan, heat the milk over medium heat with the cinnamon stick and vanilla essence. Bring to a boil and then reduce heat to keep warm.
  2. In another saucepan, combine the cooked chestnuts and sugar. Cook over medium heat until the sugar melts and the chestnuts caramelize slightly. Remove the cinnamon from the hot milk and then add the caramelized chestnuts to the milk.
  3. Cook over low heat for about 15 minutes, stirring occasionally, until the chestnuts are tender. Remove from heat and, using a hand blender, blend until smooth.
  4. Let cool and serve in cups decorated with pieces of caramelized chestnuts.

Ingredients for the base:

  • 200 g chocolate cookies
  • 100 g melted butter

Ingredients for the stuffing:

  • 300 g of cooked and peeled chestnuts
  • 200 g melted dark chocolate
  • 200 ml of liquid cream
  • 50 g sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

How to prepare chestnut and chocolate cake:

  1. Crush the chocolate cookies in a food processor and mix the crumbs with the melted butter. Press this mixture into the bottom of a tart pan and refrigerate while you prepare the filling.
  2. In a saucepan, combine the cooked and peeled chestnuts with the cream and sugar. Cook over low heat for a few minutes until the chestnuts are well integrated. Remove the chestnut mixture from the heat and add the melted chocolate. Mix until smooth and homogeneous.
  3. In a separate bowl, beat the eggs and vanilla extract. Then add the chocolate and chestnut mixture, mixing well. Pour the mixture over the cookie base in the baking pan and bake at 180°C for about 30-35 minutes, or until the center is firm.
  4. Let cool before unmolding and cutting into portions.
  5. You can decorate with whipped cream or crushed nuts if desired.

  • 200 g of cooked and peeled chestnuts
  • 100 g flour
  • 2 eggs
  • 50 g sugar
  • 1 teaspoon baking powder
  • Frying oil
  • Powdered sugar for sprinkling

How to prepare chestnut fritters:

  1. In a food processor, blend the cooked chestnuts and grind to a smooth puree.
  2. In a large bowl, beat the eggs and add the sugar and baking powder. Add the chestnut puree and flour, mixing until a uniform dough is obtained.
  3. Heat the oil in a deep frying pan at 180°C. With the help of two spoons, form small balls of dough and fry them in the hot oil until golden brown and crispy.
  4. Remove the fritters from the oil and drain on paper towels.
  5. Sprinkle powdered sugar on top before serving.
