Marzipan sponge cake recipe

Receta de bizcocho de mazapán

The holiday season, with all its lavish feasting and festivities, often leaves behind a trail of culinary leftovers that end up in the trash. Among these festival leftovers we often find boxes of marzipan that, if not consumed quickly or carefully preserved, end up becoming a good tool to wedge a table or serve as a door stopper.

And then the question arises: What do I do with the leftover marzipan? Normally the answer is in the trash can, however, this does not have to be so. Marzipan, especially when it is of good quality, has many other culinary uses, which I assure you will pleasantly surprise you.

At Casa Mira we want to show you how to use the leftover marzipan to prepare a delicious marzipan cake.

Origin of marzipan

The origin of marzipan

Marzipan originated in medieval Europe, where it was originally made with almonds and sugar. Its popularity quickly spread throughout the continent, becoming an emblematic sweet of the Christmas season. The basic recipe has endured over the centuries, although regional variations have been developed incorporating different ingredients, such as honey, nuts or candied fruit.

Marzipan is not only appreciated for its exquisite flavor, but also for its versatility in the kitchen. It is used to make decorative figurines, cake fillings and, as we will discover, as a star ingredient in recipes such as marzipan cake.

How to preserve marzipan leftovers

To ensure that marzipan is kept in optimal conditions, it is important to follow some basic tips. First, it is essential to store it in a cool, dry place, preferably in an airtight container to prevent moisture from entering. If the marzipan contains decorative figures, it is advisable to wrap them in tissue paper before storing them. In this way, they will remain fresh and ready to be used in future culinary preparations.

  • 200g wheat flour
  • 150g sugar
  • 150g butter
  • 3 eggs

  • Powdered sugar (optional, for decoration)

Instructions for preparing a marzipan cake

  1. Preheat the oven to 180°C and grease a cake pan.
  2. In a large bowl, mix the softened butter with the sugar until you obtain a light and fluffy cream.
  3. Add the eggs one at a time, beating well after each addition.
  4. Incorporate the grated or crushed marzipan leftovers into the mixture, making sure they are fully integrated.
  5. In another bowl, sift the flour with the baking powder and the pinch of salt.
  6. Add the dry ingredients to the butter and marzipan mixture, mixing gently until a homogeneous dough is obtained.
  7. Pour the batter into the prepared pan and smooth the surface with a spatula.
  8. Bake the cake in the preheated oven for approximately 40-45 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  9. Once cooked, remove the cake from the oven and let it cool in the pan for a few minutes before unmolding it on a wire rack to cool completely.
  10. Sprinkle with powdered sugar before serving, if desired, for an extra touch of sweetness.

And there you have it! A delicious marzipan sponge cake that not only makes use of Christmas leftovers, but will also delight your loved ones with its comforting flavor and smooth texture. This recipe is perfect to enjoy any time of the year and is a great way to put a holiday classic to new use.
