The most classic are the <strong>rosquillas listas and the tontas<\/strong>, whose only difference is based on the sugar bath that is given on top. The Santa Clara ones have meringue and the French ones are coated with sugared almonds. One of the most <strong>popular sweets<\/strong> among the youngest, but which, it is said, comes from Italy. <\/p>\n<p>It is made simply with sugar heated and expelled with force in the form of fine threads. The cotton candy maker&#8217;s skill consists of twisting them around a wooden stick to form a cloud. It is very peculiar to see how the chulapos and chulapas move the roulette of their barquillero. It is a metal contraption, on top of which is a spinning wheel. The traditional game consisted in that the friends had to spin the wheel and the one who got the lowest number paid the wafers to everyone.   <\/p>\n<p>For anyone who has not had the pleasure of tasting a wafer, it is a kind of wafer rolled up in the shape of a wafer. However, for years, we can find some stalls where all kinds of nuts are caramelized. The smell of caramelized sugar that the stalls give off makes you irresistible to approach them.  <\/p>\n<p>The <strong>garrapi\u00f1ado<\/strong> is made with sugar that is slowly toasted in a large cauldron. It is important not to stop stirring so that the almonds do not stick or burn. The caramel stays crunchy, so be careful not to hurt your gums when biting into it, but its sweet taste, in contrast to the apple, makes it one of the <strong>most appetizing desserts of San Isidro<\/strong>. <\/p>\n<p>What is certain is that you can&#8217;t go to Madrid without trying some of these delicious <strong>traditional San Isidro sweets<\/strong>.
