Christmas, the time of marzipan
We are looking forward to December to enjoy the delicious Christmas sweets. Nougat, marzipan, eels or Gloria cakes are some of the favorite sweets of the sweet-toothed public, so we did not want to miss the opportunity to leave you some of the most popular recipes of this Christmas, the delicious Gloria Cakes.
Curiosities of the Pasteles de Gloria
- For those who do not have the privilege of knowing them, they are a sweet made with marzipan, filled with egg yolk and glazed on the outside.
- It is said that the first people to make them were the Arabs who occupied the Iberian Peninsula. One of the main ingredients of Arab gastronomy is the almond, which is why many of the sweets we enjoy today in our country are made with this nut.
- On the other hand, Spain is the second largest producer of almonds in the world. We have a wide variety of almonds, although the best almond to make a good marzipan is the Marcona almond.
- Some elaborations of the Pastel de Gloria use sweet potato, unlike the conventional marzipan dough. Here is the recipe to make homemade marzipan, in case you also want to prepare this Christmas sweet.

Recipe for Gloria’s cakes
Ingredients
For the marzipan
- 450 grams of powdered sugar
- 450 grams of ground almonds
- Egg whites
- Lemon zest
- Vanilla essence
For the yolks
- 5 egg yolks
- 5 teaspoons sugar
For the glaze
- 1 egg white
- Powdered sugar
- Lemon juice
Elaboration of the Pasteles de Gloria
To make the marzipan:
- Mix the sugar, almonds, lemon zest and vanilla essence. Then add the egg white.
- Knead well with your hands. The
dough should behomogeneous , not too sticky, and not cracking. If it is dry, add, in equal parts, more sugar and almonds and, if it is hard, you can add a little water. - Wrap the dough in plastic wrap and let it rest in the refrigerator until the next day.
To make the cooked yolk:
- Beat the 5 egg yolks in a bowl with the sugar and microwave for 1 minute.
- Take them out, beat them again, and put them back in the microwave for another minute. The yolks should be completely cooked.
- Let them cool.
To make the Glorias:
- Roll out the marzipan dough into a rectangle.
- Place the cooked yolk in the center and roll up like a tube. Do not leave any side open or the mixture will leak out.
- Cut the tube into small pieces and place them on a baking tray, previously covered with baking paper.
- Put them in the oven at 170 degrees for about 10 minutes. Do not leave them longer because they dry out quickly.
- Finally, add the glaze and brown in the oven for a few minutes.
