The truth is that you will find dozens of variants of the nougat sponge cake. Bruno Oteiza himself proposes a tasty nougat sponge cake soaked in orange and tangerine liqueur, while other recipes prefer to add toasted almonds to give it a crunchier touch, we leave that to everyone’s imagination.

Here is a very easy recipe so you can take advantage of all that soft nougat you have stored after Christmas.

Ingredients

  • 230 g flour
  • 150 g of Jijona nougat
  • 3 large eggs
  • 120 g brown sugar
  • 1 plain yogurt
  • 1 sachet of yeast
  • 125 ml olive oil
  • Orange zest
  • powdered sugar

Preparation of the sponge cake

  • Preheat the oven to 180 degrees.
  • Meanwhile, in a bowl, separate the egg yolks from the egg whites. Beat the yolks with the sugar with a whisk until they have a foamy texture, and reserve the egg whites for later.
  • Add the oil and yogurt to the mixture and continue mixing.
  • Next, we chop the soft nougat and add it to the mixture.
  • In another bowl, sift the flour with the baking powder and add it to the first mixture. Add the orange zest, this will give a light aromatic touch to the cake that matches very well with the nougat, and mix everything well.
  • In addition, whip the egg whites that have been set aside until stiff peaks form, and add them to the mixture slowly with a spatula, using wrapping motions.
  • Let it rest, and meanwhile we grease the baking pan with oil and sprinkle with flour to prevent the cake from sticking to its walls.
  • Pour the cake batter, and if you want to give it a crunchy touch, add a few chopped almonds.
  • Bake in the oven for about 45 minutes. We will have to prick the center with a thin toothpick until it comes out clean.
  • Finally, remove from the oven and sprinkle with powdered sugar on top.
  • Serve with a scoop of nougat ice cream.
