Ingredients:
- 200 g Digestive cookies
- 100 g butter
- 400 g cream cheese
- 200 ml whipping cream
- 150 g of Jijona nougat of Casa Mira
- 100 g sugar
- 4 sheets of neutral gelatin
- Some sliced almonds for decoration
Preparation:
- Crush the cookies and mix them with the melted butter. Press this mixture into a springform pan to form the base. Set aside in the refrigerator.
- Whip the cream and keep it cold.
- In a bowl, mix the cream cheese with the sugar until smooth. Add the crumbled Jijona nougat and mix well.
- Hydrate the gelatin sheets in cold water and then dissolve them in a couple of tablespoons of hot water. Add them to the cheese and nougat mixture.
- Add the whipped cream with wrapping motions.
- Pour the mixture over the cookie base and let it set in the refrigerator for at least 6 hours.
- Garnish with slivered almonds and small pieces of nougat before serving.

Homemade Alicante nougat ice cream

Ingredients:
- 250 g of nougat from Alicante Casa Mira
- 500 ml whipping cream
- 250 ml of whole milk
- 150 g sugar
- 4 egg yolks
Preparation:
- In a saucepan, heat the milk over low heat along with the chopped Alicante nougat, stirring until completely dissolved.
- Separately, beat the egg yolks with the sugar until the mixture whitens.
- Add the hot milk to the yolks little by little, while whisking, to avoid curdling.
- Return the mixture to the saucepan and cook over low heat, stirring until it thickens slightly (without boiling).
- Let cool and add the whipped cream, mixing carefully.
- If you have an ice cream maker, follow the instructions on your machine. If not, pour the mixture into a container and freeze it, stirring every 30 minutes for the first 3 hours to prevent ice crystals from forming.
The result is a creamy ice cream, with the characteristic crunchy touch of Alicante nougat.
